Apple Butterscotch Cookies

Ingredients:

  • 2½ cups all-purpose flour

  • 1⅓ cups packed brown sugar

  • 2 teaspoons ground cinnamon

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • ½ cup apple juice

  • 1 egg

  • 1⅔ cups (11-oz package) butterscotch morsels

  • ¾ cup unpeeled grated apple

  • ¾ cup chopped walnuts

Directions:

Preheat oven to 350 degrees.

Combine flour, cinnamon, baking soda and salt in a medium bowl.

Using a mixer, beat the butter and brown sugar in a large mixing bowl until creamy. Beat in the egg.

Gradually mix in the flour mixture and apple juice.

Stir in 1 ½ cups of the butterscotch morsels, apple, and ½ cut walnuts.

Drop by rounded tablespoons onto a lightly greased baking sheet.

Bake for 10-12 minutes or until cookies are lightly browned.

Let stand for about 2 minutes before moving to a wire rack. Allow to cool completely. Dip in butterscotch glaze and sprinkle with the remaining walnuts.

 

Butterscotch Glaze:

Melt the remaining butterscotch morsels and 2 tablespoons of butter in a small saucepan over very low heat. Once melted, remove from the heat and stir in 1 cup sifted powdered sugar and 1 tablespoon of apple juice until smooth.
